Healthy Pina Coladas + Coconut Milk
I recently tried out a new brand of coconut milk in lieu of my normal brand. I usually buy Trader Joe's brand for my morning latte. But after getting back from visiting Puerto Rico, where they are known for their original Pina Colada, I decided to try my hand at making my own Pina Colada! This time I opted to use the Native Forest Brand by Edwards and Sons.
I used the Dark Barcardi Rum that we bought in Puerto Rico, coconut milk + fresh pineapples + some pineapple juice + ice and blended all together in my Vitamix. I honestly didn't measure anything and just taste tested as I went and it actually turned out pretty close to the one that we had in Puerto Rico! The hubby tried it and approved, so I give it a thumbs up!
Summer time is right around the corner and these would make for great pool side refreshments even without the rum. I also love to use the coconut milk to make iced or frozen coffee drinks in the Summer months.
